Let me just start by warning you guys before you even think of proceeding. This bread can be addictive and the aroma can be intoxicating !
To make this addictive beauty here are the ingredients that you will need:
- 2 cups of all purpose flour (keep some extra on hand)
- 2 teaspoons yeast
- 2 teaspoons white sugar
- 1 teaspoon salt
- 1 cup warm water
- 3/4 cup black olives
- 2 tablespoon mixed herbs (oregano, parsley, thyme, rosemary)
- 1 tablespoon milk
- 2 tablespoons olive oil
Warm the water slightly and stir in the sugar.
Add the yeast and give a slight stir.
Let this sit for 10 to 15 minutes until the mixture is frothy.
Add salt in the flour and to this add the yeast mixture and start kneading.
The dough will be slightly sticky but keep kneading until it all comes together.
Add in a tbsp of olive oil and knead for few more minutes.
Once the dough is smooth, place it in an oiled bowl and cover it with kitchen towel.
Let this sit in a warm place for 1 to 2 hours or until it doubles in volume.
Now slice your olives and let it dry on kitchen towel.
Flour your working surface and place the risen dough on it.
Start stretching the dough for few minutes and then form it in a rectangle.
Sprinkle the olives all over the flattened dough.
Then sprinkle your herbs and roll the dough.
Lightly kneed the dough until the olives and herbs are distributed.
You can dust with little flour if the dough is sticky.
Form the dough into a log shape and place it in a previously greased loaf pan.
Cover this with kitchen towel and let it rise again for an hour or so or until it doubles in volume.
Once the dough has risen, brush it with some milk and sprinkle some more herbs on it.
Placed the loaf pan in a pre heated oven at 170 C and bake for 35 to 40 minutes
You know your bread is done when you tap on it and it sounds hollow. The aroma which rises as the bread bakes is irresistible !
Once the bread has baked , let it completely and then slice it.
